Brownies
1/2 cup cooking oil
1 cup sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup white rice sugar
1/3 cup cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt (I usually add more because I like cocoa, sugar and salt flavor!)
1/2 cup chopped nuts (optional)
- Preheat oven to 350*
- Grease 9 inch square baking pan
- Stir together oil, sugar and vanilla in a bowl, add eggs
- In another bowl, stir together flour, cocoa, baking powder and salt
- Gradually add flour mixture to egg mixture, beating well until blended
- Stir in nuts if you like them in your brownies
- Spread mixture evenly into greased pan
- Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan
- Cool completely in pan on wire rack
