Blog changes

Thanks to everyone who followed Training Because I Can! over the last nine years. This blog started with Addison's Disease, hypothyroidism and a crazy idea of doing an Ironman distance triathlon. My life has changed and so has this blog. I am using this blog strictly for Addison's Support topics from here on out. I hope to continue providing people with hints for living life well with adrenal insufficiency.

Brownies that are gluten free, dairy free and delicious

I'd post a picture of these brownies but I ate them all too quickly!

For Meg and Heather.

Brownies

1/2 cup cooking oil
1 cup sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup white rice sugar
1/3 cup cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt (I usually add more because I like cocoa, sugar and salt flavor!)
1/2 cup chopped nuts (optional)

  1. Preheat oven to 350*
  2. Grease 9 inch square baking pan
  3. Stir together oil, sugar and vanilla in a bowl, add eggs
  4. In another bowl, stir together flour, cocoa, baking powder and salt
  5. Gradually add flour mixture to egg mixture, beating well until blended
  6. Stir in nuts if you like them in your brownies
  7. Spread mixture evenly into greased pan
  8. Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan
  9. Cool completely in pan on wire rack
